So myself and Laurie usually go out for breakfast on Saturday, I usually go for some sort of egg based breakie (I get grumpy if I don't get eggs) Laurie always goes for the more
healthy choice; granola and overnight oats are her favourite! We were at General Merchants last Saturday and Laurie being Laurie went for the oats - I tried them and they were beaut but it got me thinking, surely I could make these, so I have, they were tasty, so here is the recipe!
What You'll Need (makes 4 servings)
- 1 banana
- 250 ml of Almond Milk
- 75ml of Full Fat Greek Yogurt
- 2 table spoons of cinnamon
- 150g of dried oats
- Hand-full of Blueberries
- 3-4 crushed Walnuts
- a food blender/nutri-bullet/ninja
- 1 tupperware container
Method
- break the banana up into small chunks - about 6 pieces and add to nutri-bullet
- then pour the Almond Milk in
- next add the yogurt
- finally add the cinnamon and blend until smooth
- when the mixture is smooth pour it into a container/tupperware
- then add your oats and mix together
- put the lid on and place in fridge overnight
- scoop your desired amount into a bowl and top with blueberries and crushed walnuts
Spice it up
The beauty of this is the scope to experiment - instead of cinnamon you could use honey, flavoured protein powder or vanilla - or whatever you want! Also I have used walnuts but flaked almonds or desiccated coconut would be just as tasty! If you don't like blueberries try strawberries or another fruit of your choice!
