A short trip to Mexico for my latest recipe. Conor's Quesadillas is an alternative to the classic fajita and for me it is definitely a winner - in fact this was the first meal that I ever cooked for Laurie when I was about 15/16!
What you'll need (Serves 2)
- 2 chicken fillets - cut into strips
- 1 red onion - sliced
- 1/2 green pepper & 1/2 Red pepper
- Cheese - I suggest mozzarella
- Sauce (i'll explain this later)
- 2 large tortillas - the biggest you can find
- Fry Light Spray
- Cracked Black Pepper and Sea Salt for seasoning
How 2
- start by slicing up your ingredients - remember to use different knives for meat and vegetables
- coat your frying pan/wok in fry-light - about 4-6 sprays should be enough
- heat wok/pan over a medium heat
- add the onion first and cook for 2 minutes - this will reduce acidity by cooking them a wee while longer
- next add the chicken, season with Sea Salt and Black Pepper and cook for 3-4 minutes
- then add your mixed peppers and cook for 2/3 minutes
- at this stage add your sauce to the pan, I used sweet chilli but you could mix it up and get creative - try pesto, BBQ, chilli, southwest - whatever takes your fancy!
- while this is happening coat another flat pan with fry light and heat on a low heat
- place your tortilla on the pan and on one side add cheese, then scoop your filling onto the cheese and top with...yes more cheese
- here comes the trickiest part, fold the uncovered half of your tortilla and press down
- now flip the quesadilla over so that you get even cooking on each side

You have now cooked your first Conor Quesadilla, congratulations!
Serving Suggestion: serve with a mixed salad or some spicy rice - why not make a meal of it and have nachos for starter and some Churros for dessert, yummy!
